Virginia Apple Pudding | October 2013

My Dad found this recipe on a calendar many years ago. It has an amazing flavor and is so easy to put together. I found that it was one of those recipes that was a great confidence builder for our kids as they learned to cook.

 

Virginia Apple Pudding

Virginia Apple Pudding

 

1/2 cup butter or margarine
1 cup sugar
1 cup sifted flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 - 1/2 teaspoon cinnamon
1 cup milk
2 cups apple slices, or canned apple slices

1. Melt butter in a 2 quart casserole. The dish MUST have deep sides, I have an oval corning ware dish with 3" sides which is perfect. I have tried using square shallow dishes and it does not turn out at all, the batter cannot rise and cover the fruit.

2. Combine next 6 ingredients in a bowl to make a batter.

3. Pour the batter onto the middle of the butter - DO NOT MIX.

4. Drain the apples of juice and PILE in the center of the batter (which is in the center of the butter).

5. Bake in a 375˚ oven until the batter covers the fruit and the crust browns, about 40 - 45 minutes.

Makes 4-6 servings. We like ice cream, whipped cream, or just cream on top of this dessert.
