Tomato Basil Salad | November 2013

Oh my word, where has the last week ran off too? It sped by me so fast I did not get this entry in...

Today, is Tomato Basil Salad, and as with any salad, you can mix and match, add or subtract whatever ingredients that you like or have on hand, which is why I LOVE THEM.

Also, I would like to mention that the beautiful cloth shown in the finished salad images came from Greece with my Grandfather when he came to America for a better life. His sister made it from the VERY beginning of weaving the cloth to adding the red decorative stitch. I personally love seeing cared for antiques being used.

                                 

Tomato Basil Salad

                              

1 - 3 fresh tomatoes, either sliced or diced
4-5 leaves fresh basil, cut in a fine chiffonade (roll the leaves, using a very sharp knife and staring at the tip of the leaf slice down through all layers, move back SLIGHTLY closer to the stem, repeat
1 1/2 to 1 pound fresh mozzarella cheese, sliced or chunked
2-3 green onions, sliced fine
Button mushrooms
1-2 Radishes, sliced into thin matchsticks
Some excellent Greek olives
1 French baggette, sliced and made into garlic toasts by putting your favorite garlic spread on and placing under a broiler
A few splashes of Balsamic Vinegar

1. Dice, slice, arrange as you please. Splash with Balsamic Vinegar. Below are a few ideas for plating.
