Pork Fried Rice | January 2014

Use diced Orange Ginger Pork Roast as the meat in this fried rice. The extra sweetness from the orange marmalade is excellent.

       

Ingredients:

Diced Orange Ginger Pork Roast or diced ham
2 beaten eggs
1 tablespoon + 1 teaspoon olive oil
4 cups vegetables cut up in a small dice such as mushrooms, carrots, celery, pea pods, Chinese cabbage...
3 cups cooked rice, chilled
Sesame-Soy Vinaigrette to taste                       
          Orange-Ginger Pork Roast                    

1. Place 1 teaspoon olive oil in a large nonstick skillet. Beat eggs and put in the skillet to leave a thin coating of egg to cook. Do not stir the egg sheet. Put a lid on the pan if desired to cook the top of the egg. Once cooked cut into 2 x 1/4 inch strips.

2. Return the skillet to high heat and add the 1 tablespoon olive oil and the vegetables. Stir fry for 2 minutes. Add meat, rice and vinaigrette. Stir fry just until hot.

Makes 4 servings.

Sesame Soy Vinaigrette

In a small container combine 1/3 cup vinegar, 1/3 cup olive oil, 4 teaspoons soy sauce, 2 teaspoons sugar, 1/4 teaspoon sesame oil and 1/8 teaspoon black pepper. Cover and shake.
