Orange Marmalade Bread | March 2014

This is an excellent bread machine recipe with great flavor and makes an excellent toast. Hope you like it as much as we do.

Ingredients for a 2 lb. loaf:

2/3 cup warm water (80˚ to 100˚)
1/2 cup orange marmalade or apricot preserves
1/3 cup butter, cut up
1 1/4 teaspoons salt
1 1/2 teaspoons grated lemon peel
4 cups unsifted bread flour
3 teaspoons active dry yeast

1. Heat water and orange marmalade in a small bowl in the microwave for 20 seconds.

2. Add to the pan of your bread machine with the rest of the ingredients in the order in which the bread machine manual states. Set the cycle to sweet, the size to 2 lb., and any other settings as desired.

3. Make sure your dough is nice smooth, if it is a little dry or crumbly then add a little water 1 teaspoon at a time. If the dough is too wet then add flour 1 teaspoon at a time. you want the dough to be just SLIGHTLY sticky. I usually take the dough out of the machine and knead by hand at least 5 minutes beyond the knead cycle of the machine.

4. Place the dough back in the machine and allow it to proof.

5. If you like the way the bread machine bakes the bread then allow it to finish.

Adapted from Great Bread Machine Baking by Marlene Brown. I recommend this cookbook to anyone that enjoys using their bread machines. It is full of easy to follow recipes with excellent flavor.

Enjoy!
