Orange-Ginger Pork Roast | January 2014

One of my favorite pork roast recipes. Excellent flavor, easy to make, and economical...can't ask for more than that. This pork makes the best fried rice too. I found this recipe in a Better Homes & Gardens magazine somewhere in the 1990's and it is still a favorite of ours.

         

Baking temp: 350˚
Baking time: 40 minutes

Ingredients:

4 lbs.boneless pork roast, sliced into 1/2 inch slices
1 1/2 cups orange juice
1/2 cup soy sauce
1 cup orange marmalade
1/4 cup minced onion
1 teaspoon ground ginger
1/2 teaspoon Lawry's garlic salt

1. To make the marinade, stir all ingredients except the roast together in a large ziploc bag or casserole.

2. Slice the pork into 1 inch slices and place the meat in the marinade making sure to turn to cover all.

3. Marinate in refrigeration at least 6 hours to overnight. Stir occasionally. 

4. Remove the meat from the marinade (reserve marinade).

5. Roast in the oven on a rack placed in a cookie sheet with sides about 40 minutes. Baste often with the reserved marinade. Roast until the meat thermometer registers 170˚ when pressed into the middle thickest part of the pork slices.
