Mom's Potato Soup | December 2013

Mom said that she went out to eat at a local restaurant in a nearby town years ago and ordered their potato soup. She was so disappointed with it that she vowed to go home and make a better soup than they served. She said this is MUCH BETTER than their potatoes, water, and no seasonings.

         

Ingredients:

8 - 10 potatoes, diced, skins on or off
2 carrots, sliced
2 stalks celery, sliced thin
1/2 medium sized onion, diced
*****
2 cans Campbell's Cheddar Cheese Soup
1 cup heavy cream
2 cups milk
1-2 teaspoons chicken base
4 cups diced ham
Milk or water to make the consistancy that you like
Cracked black pepper, to your taste                   
Mom's Potato Soup                        

1. Dice the potatoes and place in a casserole dish (with lid) with a little water. Add the sliced carrots, sliced celery, and diced onion. Mix well.

2. Microwave for 10-13 minutes (depending on your microwave). You want the potatoes just tender, not too soft.

3. After they have reached fork tender, place the casserole dish with veggies on the stove top over medium heat. Add the rest of the ingredients. Stir and heat to 170˚.

Easy as it can be and very hardy with a wonderful smooth texture.
