Chocolate Chunk Cookies| October 2013

Who can resist chocolate? i guarantee that I CANNOT. Especially a good Chocolate Chunk Cookie. I gotta give it to Nestle for their Toll House Chocolate Chip Cookies for their cookie...but sometimes you just want a cookie a little different. This Chocolate Chunk Cookie is very light and has a great taste.

                                 

Chocolate Chunk Cookies

                              

1 cup butter or margarine
2/3 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 large egg
2 teaspoons vanilla
2 1/2 cups unsifted all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 - 12 ounce package semi-sweet chocolate chips
1 cup coarsely chopped walnuts

1. Preheat oven to 375˚. Line cookie sheets with parchment paper.

2. In a large bowl, beat butter and sugars until light and fluffy. You will achieve a lighter mix with a mixer and medium speed. The mix will lighten in color. Beat in egg and vanilla.

3. In a separate bowl, mix flour, baking soda, cinnamon, and salt.

4. Mix the butter/ sugar mixture and flour mixture together. Beat with a mixer at low speed until well combined. Stop occasionally to scrape the sides of the bowl. By hand fold in the chocolate chunks and walnuts.

5. Drop by heaping tablespoon full onto parchment paper. They will spread so leave room. Pat & shape cookies to 1/2 inch thick round. Bake 12-15 minutes. Check by nice caramel color and when touched in the center, your finger does not leave an indent. Store in an airtight container.
