Cajun Shrimp & Potatoes | 2015

YUMMMMMM...I LOVE really does not matter how it has been fixed. I still have a lot of potatoes from our garden which makes this recipe perfect.




1 tablespoon butter
1 tablespoon olive oil
2 cups potatoes, small dice
1/2 cup onion, small dice
1/2 cup green bell pepper, small dice
1/2 cup celery, small dice
1 clove minced garlic
1 can (14 1/2 ounces) undrained petite diced tomatoes
1 can (14 ounces) chicken broth
black pepper to your taste
garlic salt to your taste
1/2 teaspoon brown sugar
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
12 ounces frozen precooked shrimp, I remove the tail                        

Cajun Shrimp & Potatoes

1. Heat butter and oil in a medium size skillet over medium heat.

2. Add diced potatoes and brown. Once cooked add onion, bell pepper, celery, and garlic and brown.

3. Add broth, diced tomatoes and spices. Bring to a boil and simmer about 10 minutes.

4. Add shrimp, simmer 5 minutes.

Serves 4.
