 Apple Salad | January 2014




3 cups apples, peeled & diced
1 cup celery, finely cut
1/2 cup pecans or walnuts, coarsely chopped
2/3 cup whipping cream
1/2 cup powdered sugar
1/4 teaspoon salt
2-3 drops vanilla                  


1. Place the diced apples in a bowl with lemon juice (or lemon soft drink like sprite or 7up) and toss to coat to keep them from browning.

2. Stir together the apples, celery, and nuts.

3. Add salt & vanilla to the cream.

4. Whip to almost soft peaks, add the powdered sugar. Whip the cream to stiff peaks.

5. Fold in the apple mixture until well blended.

6. Place in a refrigerator until ready to serve.

7. Stir again just before serving.
